Baked Chicken Parmesan

Did you know that Baked Chicken Parmesan is in the top 3 favorites in Italian restaurants.  This recipe has been swarming all over Pinterest for about a month now.  So, being that I love Pinterest…..I figured I better give it a try.  I am SO SO glad I did.  My husband and toddlers agree.

Baked Chicken ParmesanI took me 5 minutes to put together and I had all the ingredients on hand.

It did take a little longer than an hour to bake, but next time I will cut my chicken breasts down to ½ to 1 inch thick and make sure they are completely thawed in the middle.  That being said.  So worth the wait and we all had seconds.

Ingredients
  

  • 5 thawed chicken breasts cut to ½ to 1 inch thick
  • 2 tablespoon Olive Oil
  • 1 teaspoon red pepper flakes
  • 2 cloves garlic minced
  • 1 5 oz bag Butter and Garlic croutons
  • 2 cups marinara sauce. I used Classico roasted tomato and basil
  • 1 tablespoon dried basil
  • 3 cups mozzarella cheese shredded
  • 2 cups parmesan cheese grated

Instructions
 

  1. In a casserole dish, (I used an 11x9 foil pan) drizzle in the olive oil and sprinkle with red pepper flakes. Put the minced garlic evenly over the olive oil.
  2. Layer on the chicken breasts in to the bottom of the pan.
  3. Pour marinara sauce over top and sprinkle with the dried basil
  4. Sprinkle 1 ½ cup mozzarella cheese and 1 cup parmesan cheese.
  5. Top with croutons followed by remaining cheeses.
  6. Bake for 55-65 minutes at 350 until chicken is 160 degrees.

I pounded down what chicken I had (2 breast and about 5 tenderloins) - really good - and instead of the croutons I used my crushed pork rinds (mixed with lots of Italian seasonings) - kept it low carb and it turned out really delicious - loved the hint of the red pepper flakes. Thanks so much for the recipe!

  2. This sounds really good. I think I may try it tonight. My daughter loves Chicken Parm. As a few mentioned about the size and thickness of the chicken breasts, normally I use the chicken tenders. They are the perfect size for kids and I like them too.
    Just a thought.

  3. Made this twice now very good. As you, I found out it is better to cut the chicken up into pieces not have them whole. I also made bow tie noodles and put sauce on them and then put the mixture of chix over them. Very yummy!

  4. Would this freeze well before it was baked? I'm thinking about trying it at our MOPS meeting. Some moms may not want to bake it that night.

  5. Made this tonight. Delicious! And I'm not usually a big fan of chicken parm, but I absolutely love croutons! Haha so I had to try it. Glad I did! 🙂

    To answer the last commenter- I think it would serve 5 women. Maybe 6 if you cut it into smaller servings.

    Also made the Olive garden copy breadsticks!!!- O.M.G. Sooooo good!!!!! Those are a must!
