Cinnamon Chip Scones

On my way to 100 recipes in 100 days.  Here is recipe 76: Cinnamon Chip Scones!

Cinnamon Chips can be hard to find in the store when it isn’t a holiday season.  When my Grammy was here at Christmas time she and I hit the store and stocked up on these.  They are so yummy and a nice little surprise in baking.

Scones are so much easier to make than I ever would have thought.  They really are.  And if you find a great recipe like this one, they will be moist and perfect with a morning cup of coffee.

Cinnamon Chip Scones

3 ¼ cup flour

â…“ cup + 2 tablespoon sugar, divided

2 ½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

¾ cup cold butter, cubed

1 cup buttermilk

1 pkg cinnamon baking chips

2 tablespoon butter, melted

1. In a large bowl, combine the flour, ⅓ cup sugar, baking powder, baking soda, and salt.  Cut in the cold butter until mixture resemble coarse crumbs.  Stir in buttermilk just until dough is moistened.  Fold in chips.

2. Turn dough onto a lightly floured surface and knead for 10-12 times until dough is no longer sticky.  Divide in half and gently pate each portion into a 7 inch circle.  Brush with melted butter and sprinkle with remaining 2 tablespoon sugar.

3. Cut each circle into six wedges and separate.  Place on an ungreased cooking sheet.  Bake at 425 degrees for 10-13 minutes or until lightly browned.
