Peppermint Snowball Cookies

Peppermint Snowball Cookies.  Is there anything better than a sweet treat covered in powdered sugar?  I just don't think there is.  These are melt-in-your mouth good, with the sweetest hint of mint and white chocolate.  Oh wow!

Ingredients

1 cup salted butter, soft at room temperature

2/3 cup powdered sugar

2 1/4 cup flour

1/2 tsp salt

1 tsp peppermint extract

red food coloring

3/4 cup Ghirardelli peppermint chunks, chopped

2 cups additional powdered sugar for coating

Instructions

In a large mixing bowl, cream together butter and 2/3 cup powdered sugar.  Mix until light and fluffy.

Add in flour, salt, and peppermint and mix until combined.

Add in red food coloring 2 drops at a time until you reach your desired color.  My cookies were more of a pink.

Stir in chopped peppermint chunks.  Cover bowl and refrigerate dough for 1 hour.

Preheat oven to 375 degrees and line a baking sheet with parchment paper.

Scoop out 1-1 1/2 Tbsp of dough and roll in to a ball. Place on cookie sheet.  I bake 12 per sheet.

Bake cookies for 7-8 minutes.  You don't want your cookies to get more that just a touch of very light brown on the bottom.  Let your cookies cool completely and then toss them in powdered sugar.  I give my cookies two rounds in the powdered sugar because I love it.  🙂
