White Chocolate Cranberry Cookies

This cookie is simple, strait forward, and to the point.  Nothing fancy, a nice simple, buttery cookie dough with basic mix ins.  Its a total hit in the taste department!

Ingredients

1 cup salted butter, soft at room temperature

1 1/3 cup sugar

2 eggs

3 tsp vanilla extract

2 2/3 cup flour

3 tsp cornstarch

1 1/2 tsp baking soda

1/2 tsp salt

1 1/3 cup white chocolate chips

1 1/3 cup dried cranberries

Instructions

Preheat oven to 350 degrees.  Line a baking sheet with parchment paper and set aside.

In a medium bowl, mix together the flour, cornstarch, baking soda, and salt.  Set aside.

In a large mixing bowl, cream butter and sugar until light and fluffy.  Add in eggs and vanilla.  Mix until well combined.

With your mixer on low, slowly add in the flour mixture and mix just until combined.

Using a spatula, fold in the chocolate and cranberries.  Make sure they are evenly incorporated.

Scoop out dough about 1 1/2 to 2 Tbsp worth and place on baking sheet.  Bake for 8-10 minutes until just lightly golden on the edges.  Cookies should still be very soft in the middle.

Let cookies cool completely and store in an air tight container.
