Peanut Butter Cookie Dough (Freezer)

Peanut Butter Cookie Dough
1/4 cup butter, softened
1/4 cup shortening
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/2 tsp vanilla
1 egg
1/2 cup peanut butter
1 1/3 cup flour
1 tsp baking soda
1/4 tsp salt


*Cream together first 7 ingredients.  Mix until fluffy.  Add in remaining ingredients and mix well.

Shape dough in to two 8 inch logs on wax paper.  Cover with wax paper and then roll in heavy duty foil.  Freeze up to 3 months.

*To Serve: Let thaw at room temp for 15 minutes.  Slice frozen logs into 1/4 inch slices and place on cookie sheets.  Bake at 350 degrees for 8-10 minutes until lightly browned.
