On my way to 100 recipes in 100 days. Here is recipe 67: Popcorn Cake!
My cousin celebrated her 13th birthday this month. My aunt made delicious cupcakes so I decided to switch it up in the treat department. This cake is addicting and so easy to make. It would be great for a summer birthday when you don’t want to heat up the kitchen.
Popcorn Cake
2 bags popcorn, popped and kernels removed
2 cups M&M’s
1 1/2 cups broken pretzel sticks
1/2 cup butter
16 oz mini marshmallows (8 cups)
Bundt pan or round tube pan
1. Melt butter and marshmallows in heavy sauce pan over medium heat. Stir until smooth and then let cool 5 minutes.
2. In a large bowl, mix popcorn and pretzels. Pour marshmallow mixture over top and sprinkle with M&M’s. Stir well.
3. Press in to greased Bundt or tube pan and cover with foil. Let set for about 1 hour. Keeps well for only about 1 day when stored in air tight container.
