Authentic Irish Coffee

This is such a treat for a cold evening after putting the kids to bed and curling up with a good book. I like mine made with decaf so that I can still easily fall asleep, but you can make it with regular coffee which would be perfect for serving at a Christmas Brunch.  Note, pairs well with chocolate chip cookies!

Ingredients
  

  • 1 teaspoon instant coffee decaf or regular
  • 1 teaspoon granulated sugar
  • 1 teaspoon brown sugar
  • 8 oz boiling water
  • 2 tablespoon Irish Whiskey
  • 2 cups Heavy Whipping Cream
  • 1 teaspoon ground cinnamon

Instructions
 

  1. To make the thickened cream, pour 2 cups cold, heavy cream in a stand mixer and use whisk attachment to whip on medium-high until cream thickens up, but don't let it for peaks.  This will take about 2 minutes.  Add in 1 tsp cinnamon and whip for just 1 minute more.  Cream will keep well for a week in an airtight container in the fridge.
  2. In a 12 oz coffee mug, put in instant coffee, both sugars, and 8oz of boiling water.  Stir well.
  3. Add in 2 tablespoon Irish Whiskey and give a slight stir.
  4. Top with 2 tablespoon thickened cinnamon cream and let it settle on top.
  5. Enjoy!!
