I could slather just about any breakfast food in a creamy Hollandaise sauce. As I imagined up this Keto Bacon Benedict, I knew I wanted to eliminate the bread and UP the good fats. Avocado? Yes, please. Thick cut bacon? Bring it on! Poached eggs that take mealy 45 seconds? Now I am hooked!
4 egg yolks
1 TBSP mayonnaise
1 tsp lemon juice
1/8 tsp cayenne pepper
1/4 tsp salt
1/2 cup unsalted butter, melted
Poached eggs (2 per person)
Slowly and carefully whisk together the egg yolks, mayonnaise, lemon juice, cayenne, and salt until nice and smooth.
In a small bowl, melt the butter in the microwave. Slowly and carefully pour the melted butter into the egg yolk mixture and whisk constantly so as not to make the egg yolks lumpy.
In the microwave, heat the entire mixture for 15 seconds and stir. Heat again for 10 seconds and stir. Heat again for 5 seconds. Stir and let set to thicken while you assemble your stack with the poached egg on top.
I poach my eggs in the microwave and it takes 45 seconds for 2 eggs. Easy Peasy!
This sauce can be kept for 2-3 days in the fridge in an airtight container. This sauce is delicious with veggies and chicken as well. ENJOY!
