Red Velvet Sandwich Cookies. These cookies are everything that is right with the world. Chocolate, butter, sugar, delicious gooey filling.
Ingredients
For the cookies:
½ cup salted butter, soft at room temperature
1 cup sugar
1 egg
1 Tbsp liquid red food coloring
1 ½ cups flour
2 Tbsp unsweetened cocoa powder
1 tsp baking soda
¼ tsp baking powder
¼ tsp salt
For the filling:
½ cup shortening
½ cup salted butter, soft at room temperature
1 Tbsp hot water
½ tsp vanilla extract
2 cups powdered sugar
Instructions
For the cookies:
Preheat oven to 375 degrees and line a cookie sheet with parchment paper.
In a mixing bowl, cream together butter and sugar until light and fluffy. Mix in the egg and food coloring. Mix until well combined.
Slowly add in flour, cocoa powder, baking soda, baking powder, and salt and mix until well combined. Scrape down sides of bowl as needed.
Scoop dough out in to 1-1 ½ tablespoon balls and place 3 inches apart on your baking sheet.
Bake cookies for 7-8 minutes and cool completely on a wire rack.
For the frosting:
Using an electric mixer, whip together butter and shortening until fluffy and smooth. Add in hot water, extract and slowly the powdered sugar. Whip until smooth.
Match cookies up in to pairs and sandwich together with filling. Enjoy!
