Sheet Pan Cookie Bars

Often times I need to make a large quantity of cookies but I don't have time to bake pan after pan of individual cookies.  Enter cookie bars....the perfect solution.  I have my very very favorite cookie bars, but I wanted to see how making them in a sheet pan would go.  Sheet cake is always a hit....so why not sheet pan cookie bars?!

Ingredients

1 cup salted butter, soft at room temperature

1 1/4 cup packed brown sugar

3/4 cup granulated sugar

1 Tbsp vanilla extract

2 eggs

2 3/4 cup flour

1 tsp baking soda

1 tsp salt

1 cup mini chocolate chips

1 1/4 cup mini M&Ms

Instructions

Preheat oven to 350 degrees.  Line your sheet pan with parchment paper and set aside.

In the bowl of your stand mixer, cream together the butter and sugars.  When the mixture is light and fluffy, add in the vanilla and eggs and mix well.

In a medium bowl, stir together your flour, salt, baking soda and then slowly add to the butter mixture while mixing on low speed.  Mix until well combined.

With a spatula, fold in the mini chocolate chips and mini M&M's.

Spread dough evenly in to your sheet pan.

Bake for 20-25 minutes until the edges are golden and the middle is slight golden brown.  Cool completely before cutting in to bars.

Notes

My sheet pan measures 12" X 17" X 1" . Your pan might vary slightly so just watch the cooking time.
