Surprise Snowball Cookies

Surprise Snowball Cookies.  Hershey Kisses hidden in the perfect dough and tossed in powdered sugar.  Nothing about this makes any sense….its just all madness…..sweet, melt in your mouth madness.  I love the crunchy bits of pecan, the powdered sugar coating my fingers, and the melty goodness of a Hershey’s Kiss.  All combined in one perfect cookie.  You.Are.Welcome.

Eight.  Eight cookie recipes in to my series and I have no self control.  I love all the cookies and I just want to bake and watch Elf and drink coffee.  I think I will continue to wear my lounge pants (glam-leisure!) and my apron and keep the oven on.  It’s a good life my friends, it’s a good life.

Surprise Snowball Cookies

Surprise Snowball Cookies.  Hershey Kisses hidden in the perfect dough and tossed in powdered sugar.  Nothing about this makes any sense….its just all madness…..sweet, melt in your mouth madness.  I love the crunchy bits of pecan, the powdered sugar coating my fingers, and the melty goodness of a Hershey’s Kiss.  All combined in one perfect cookie.  You.Are.Welcome.

Ingredients

Scale

1 cup salted butter, soft at room temperature

1/2 cup sugar

1 tsp vanilla extract

2 1/2 cups flour

3/4 cup chopped pecans, chopped again to be finely chopped

36 Hershey’s Kisses unwrapped

3–4 cups powdered sugar for coating

Instructions

Preheat oven to 375 degrees and line a baking sheet with parchment paper.

In a medium mixing bowl, cream together butter and sugar until light and fluffy.

Add in vanilla, flour, and chopped pecans.  Mix until well combined.

Scoop out dough in 1-2Tbsp portions and roll in a ball.  Flatten ball in your hand and place in 1 hershey kiss.  Fold up dough around it and form back in to a ball.

Place cookies on baking sheet and bake for 10-11 minutes.  You don’t want the bottoms of the cookies to become more than a very light golden brown.

Cool cookies completely and roll in powdered sugar.  I give my cookies two coats of the powdered sugar.  Enjoy!
