Chicken, good. Bacon, good. Avocado, good. What’s NOT to like?! (Friends reference anyone?)
2 1/2 cups chopped, cooked rotisserie chicken
6 pieces cooked bacon, chopped
2 large ripe avocados, diced
1 cup halved cherry tomatoes
2 hard boiled eggs, peeled and chopped
2 Tbsp avocado oil (or olive oil)
2 Tbsp lemon juice
1 tsp dill weed
1/4 tsp ground black pepper
Mix together chicken, bacon, avocado, tomato, and egg in a large bowl.
Stir together lemon juice, oil, pepper and dill in small bowl.
Pour lemon juice mixture over chicken mixture and mix well.
Eat alone, on a bun, or rolled up in a large romaine lettuce leaf. Enjoy!
