Texas Sheet Cake Cookies
Merry Christmas! Thanks for hanging in here with me while I was away from the blog for a bit. We are all healthy now and ready to enjoy lots of holiday treats and parties. I am headed to a cookie exchange this weekend and I cannot wait to share these amazing Texas Sheet Cake Cookies. I LOVE Sheet cakes!
My mother-in-love makes the most amazing Texas Sheet Cake. When I saw that the recipe could be converted into a cookie, I knew that I had to share them with all my friends. I bet you wish you were attending this cookie party!
Let's jump right into the fun. These are easy to make but do not, in any way, follow a traditional cookie recipe. I don't know of any other cookies that are made like these. On that note, I don't think there are any cookies that even come close to tasting like these either. (But please try them all and let me know your thoughts 😀)

Ingredients
Cookies:
- ½ cup butter room temp
- ⅓ cup sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 ⅓ cup flour
- ½ cup semi-sweet chocolate chips
Icing:
- 1 cup butter
- ¼ cup cocoa powder
- 6 tablespoon milk
- 5 cups powdered sugar
- You can half the icing recipe if you don't want to do a double glaze
Instructions
- Preheat oven to 350 degrees. Line cookie sheet with parchment paper.
- In a large mixing bowl, beat butter and sugar together until light and fluffy.
- Add in egg, vanilla, baking powder, salt and mix on low until incorperated.
- In a small bowl, melt chocolate chips in microwave 30 seconds at a time stiring in between. Just until melted.
- Pour melted chocolate in to cookie dough and mix on medium speed until mixed well.
- Place tablespoon amount of dough on cookie sheet and bake for 7-8 minutes, just until set. Do NOT overbake. These should stay soft and dense in the middle when cooled.
- Leave cookies on cookie sheet and set on wire rack to cool.
- While cookies are cooling make icing. In a medium sauce pan, melt butter, cocoa, and milk and stir to combine. Remove from heat and whisk in powdered sugar. Whisk until smooth.
- Once cookies are cooled, pour over first glaze. Let cookies set and then add a second glaze.
- When cooled and icing is set, remove from pan. use your fingers to sample the amzing icing left behind
- These will stay fresh in an air tight container at room temperature for up to 2 days.

Those look delicious and Im gona make them! Your instructions don't include the addition of flour so I thought Id point that out. Does it get added to the other dry ingredients? Thank you!
