Scrambled Eggs
Whisk all ingredients together until well incorporated.
Place a large skillet on a cold stovetop burner and drizzle with olive oil.
Add the egg mixture to the cold skillet and turn heat to medium-low. Stir eggs slowly and continually until fluffy and almost set, they should still be a little bit wet. Remove the pan from the heat and let eggs set. The eggs will continue to cook as they cool and stay fluffy.
*Stir and chop the eggs while cooking to be medium to small crumbles so that they can distribute evenly over the pizza
Country Gravy
Mix cold water and country gravy mix. Combine well.
Add boiling water to gravy mix and stir until smooth and well mixed.
Microwave for 30 second intervals, stirring between each interval until the gravy thickens up.
Gravy will also continue to thicken as it cools.
*you can also make the gravy in a saucepan on the stovetop. Follow package instructions.
Assemble Pizza and Bake
Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
Place your pizza crust on your lined baking pan.
Spread country gravy evenly over the pizza crust.
Sprinkle crumbled eggs over the gravy.
Sprinkle ¾ cup shredded Monterey jack cheese over the eggs.
Sprinkle ¾ cup bacon over the pizza.
Sprinkle ¾ cup shredded mozzarella cheese over the pizza.
Bake 10-12 minutes until cheese is melty and lightly golden.
Let pizza cool for 5 minutes before slicing.
The eggs and gravy will make enough for 3 or 4 pizzas or several individual pizzas. Add cheese and bacon to your preference. 🥰
