Easy Breakfast Pizza

I love making this recipe.  I first started making Easy Breakfast Pizza for holiday mornings, and now my kids request it frequently.  Because it is so simple, there is no reason to save it only for special occasions.  Make it on a Sunday evening and have breakfast ready for Monday and Tuesday in the fridge.

Soft scrambled eggs, bacon, cheese, country gravy.  Comfort food breakfast to feed a crowd. 

Measure the bacon with your heart- as little or as much as you like. 😂

Ingredients

Pizza crust topped with country breakfast gravy, and sprinkled with bacon, eggs, and melted cheese. This easy breakfast pizza recipe is quick and uses basic ingredients. The eggs and gravy make enough for 3 or 4 full size pizzas. Use as much cheese and bacon as. you like.

When I make scrambled eggs and have leftovers, I put them in the fridge to make this pizza the next day.
  • Pizza crust- I like Boboli's, using a flat naan bread works great for personal size pizzas
  • Country gravy mix
  • Bacon. bits- make your own or buy them, I love the ones from Costco
  • Eggs- 10 to 12 eggs, soft scrambled
  • Shredded cheese- I like a mix of Colby Jack cheese and mozzarella

How to make scrambled eggs:

  • 10-12 eggs
  • ¼ cup half and half
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  1. Whisk all ingredients together until well incorporated.  
  2. Place a large skillet on a cold stovetop burner and drizzle with olive oil.
  3. Add the egg mixture to the cold skillet and turn heat to medium-low.  Stir eggs slowly and continually until fluffy and almost set, they should still be a little bit wet.  Remove the pan from the heat and let eggs set.  The eggs will continue to cook as they cool and stay fluffy.  
  4. *Stir and chop the eggs while cooking to be medium to small crumbles so that they can distribute evenly over the pizza

Make the gravy:

  • ½ cup cold water
  • packet of country gravy mix
  • 1 ½ cup boiling water
  1. Mix cold water and country gravy mix.  Combine well.
  2. Add boiling water to gravy mix and stir until smooth and well mixed.
  3. Microwave for 30 second intervals, stirring between each interval until the gravy thickens up.
  4. Gravy will also continue to thicken as it cools.
  5. *you can also make the gravy in a saucepan on the stovetop.  Follow package instructi

How to make breakfast pizza:

Homemade breakfast pizza with eggs and bacon makes for a favorite serve-yourself breakfast for lazy mornings or when you have guests.

Assemble up to 2 days ahead and bake when ready. This is a wonderful Christmas morning breakfast and making it ahead of time is a huge time saver. 
  1. Prep the pizza toppings
    • scramble eggs
    • make gravy
    • shred cheese
    • chopped crispy bacon or bacon bits
  2. Assemble the pizza- instructions in the recipe card.
  3. Bake the pizza right away or wrap the pizza in plastic wrap and save it in the fridge for up to 2 days to bake later.

Assemble the pizza:

  1. Preheat oven to 400 degrees.  Line a baking sheet with parchment paper.
  2. Place your pizza crust on your lined baking pan.
  3. Spread country gravy evenly over the pizza crust.
  4. Sprinkle crumbled eggs over the gravy.
  5. Sprinkle ¾ cup shredded Monterey jack cheese over the eggs.
  6. Sprinkle ¾ cup bacon over the pizza.
  7. Sprinkle 1 cup shredded mozzarella cheese over the pizza.
  8. Bake 10-12 minutes until cheese is melty and lightly golden.
  9. Let pizza cool for 5 minutes before slicing.

Variations: (additional toppings)

Crumbled breakfast sausage,  diced ham, pepper jack cheese, sharp cheddar cheese, sauteed onion and bell peppers. In the northern Midwest, they are known to make their breakfast pizza with a cheese sauce in place of the gravy. There are so many different ways to make a delicious breakfast pizza.

You can easily use refrigerated or homemade pizza dough and bake it on a greased sheet pan. You won't need to bake the crust first, but the pizza will need to cook longer. Just start with the recommended time on the pizza dough instructions.

Store Breakfast Pizza Leftovers

Store the leftover pizza in an airtight container are good in the fridge for up to 4 days.  Reheat in the microwave or oven.  In the oven, I reheat the pizza at 400 degrees for 6-8 minutes. minutes.  The oven is a great way to reheat several slices at once and the crust doesn't get soft. 

This does not freeze well as the country gravy doesn't thaw well after being in the freezer.

Leftover breakfast pizza reheats wonderfully in the microwave for 60 seconds. 

Top Tip: (How to avoid rubbery scrambled eggs)

Low and slow is the name of the game with soft scrambled egg. . Start them in a cold skillet and use a medium-low heat. Stir frequently and remove them from the heat before they are fully set.

This is a party favorite for brunch.  You can make several to feed a crowd.  Pair with a fresh fruit salad, orange juice, and muffins. Your whole family will love this.
