On my way to 100 recipes in 100 days.  Here is recipe 47: Oreo Cupcakes with Whipped Marshmallow Frosting!

My cousin and I decided that it was time to try a new cupcake recipe.  So, we set to Pinterest.  Carrie doesn’t usually love chocolate but we both really love Oreos.  So, we knew this would be a great recipe.

Oreo Cupcakes

There is a full Oreo cookie hiding in the bottom of the cupcake liner.  Surprise!!  An extra treat!

Oreo Cupcakes

I had seen this frosting recipe floating around Pinterest and I have been dying to try it.  I tweaked it and doubled the amount and it was amazing!  Paired with the chocolate cupcake, it tasted just like Oreo filling.  Oh my landy, I was licking my fingers while eating this one.

    Hello!
I’m coworker of Clint and he gave me this Oreo cup cake while I was there and it’s one of the best sweets I had tried during my business trip, and actually I’ve been waiting for the recipe! Hopefully I will have a time to cook this weekend.

i just made the icing and the cupcakes for my daughters birthday tomorrow. Im planning on making your cute Minnie Mouse cupcakes! The icing is super runny though! Whats the best way to fix it? I was planning on icing them tomorrow right before the party.

      Good morning
This icing does get very soft, I frosted them and then kept them in the fridge. My best guess is that your butter was too soft…..try more powdered sugar. I hope they turn out well for you!
      Blessings,
      Lexi
