Peanut Butter Cookie Dough (Freezer)

Peanut Butter Cookie Dough
¼ cup butter, softened
¼ cup shortening
½ cup packed brown sugar
½ cup granulated sugar
½ teaspoon vanilla
1 egg
½ cup peanut butter
1 ⅓ cup flour
1 teaspoon baking soda
¼ teaspoon salt

*Cream together first 7 ingredients.  Mix until fluffy.  Add in remaining ingredients and mix well.

Shape dough in to two 8 inch logs on wax paper.  Cover with wax paper and then roll in heavy duty foil.  Freeze up to 3 months.

*To Serve: Let thaw at room temp for 15 minutes.  Slice frozen logs into ¼ inch slices and place on cookie sheets.  Bake at 350 degrees for 8-10 minutes until lightly browned.
