No Bake Cookie Dough Truffles {egg-free}

Who doesn't love cookie dough?! These Cookie Dough Truffles have no eggs and have all the flavor and texture of your favorite cookie dough. These little beauties are easy to make and are sure to be a great gift for anyone.
Safety Note:
Raw flour should not be eaten as it has to potential to make you sick. Raw flour is a true raw food and has not been heat-treated to kill bacteria. The first step in this recipe is to heat treat the flour. Heat treating and cooking the flour kills any potential contaminants. It's very easy, and quick, and ensures the flour is safe to eat.
Before you begin:
Measure out your flour into a glass bowl or glass measuring cup. Heat in the microwave for 60 seconds. Stir flour and heat for an additional 15-20 seconds until flour is 165 degrees. It typically only takes 75 to 80 seconds total to reach the safe temperature of 165 degrees.
Ingredients
- ½ cup butter soft at room temperature
- ¾ cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 cups flour
- 14 oz sweetened condensed milk
- ¾ cup mini chocolate chips
- 1 lb chocolate candy coating
- white chocolate candy coating for drizzle
Instructions
- In a medium mixing bowl, beat together butter and brown sugar until light and fluffy.
- Add in the flour, sweetened condensed milk, and vanilla. Mix well.
- Fold in mini chocolate chips, and stir just until combined
- Cover bowl and refrigerate for about 1 hour until firm enough to handle
- Roll dough in to one inch balls and place on parchment paper. If dough is sticky, add a bit of flour to your hands.
- In a microwave safe bowl, melt candy coating according to package directions.
- Dip truffles in chocolate and return to parchment paper to set up about 15 minutes. Drizzle with white chocolate
- Store in the refrigerator and serve cold.
- To keep longer, freeze cookie dough balls before dipping in chocolate. Dip in chocolate on the day you plan to serve them.
