Baked Oatmeal (My Favorite Breakfast)

Baked Oatmeal is in our fridge at all times. It is so yummy!

If you have ever stayed the night at our house, you know that we LOVE baked oatmeal.  I was given this recipe from a friend and I have been working on making it perfect for my tastes.

Ingredients:
5 eggs, beaten
1 ½ cup oil
2 tablespoon vanilla
4 cups milk
Mix well, then add:
1 ½ teaspoon salt
2 tablespoon  baking powder
2 tablespoon cinnamon
2 ½ cups packed brown sugar
Mix well, then add:
10 cup oatmeal (not quick oats)
2 cups dried fruit (I love the sunmaid fruit bits)

Pour into a greased 9x13x2 pan and bake for 55 min at 350.

I even bought a special pan just for my baked oatmeal with a lid.  We love it and like I said, always in the fridge.  

Put some in a bowl, reheat in the microwave for 60-80 seconds and serve with milk or half and half!

  1. This recipe is excellent! I love having breakfast prepared for the entire week, plus, it's delicious! Other baked oatmeal recipes I've tried called for fresh fruit but I think your recipe with dried fruit is what makes it so successful! Thanks for the wonderful recipe!

  2. This baked oatmeal is good. I'm glad I made it except for the fact that the baking dish is really full and the oil bubbled over and made a mess in my oven and then put off a burnt oil smell in the house rather than the smell of cinnamon that I expected. Can't imagine that this hasn't happened to you. A warning and/or a tip to use a deeper/larger baking dish would have been appreciated.
