Oh wow! This was such a fast and easy lunch to make. And it is light and fresh. Perfect for a spring afternoon.
This could easily be sliced in small squares and served as an appetizer as well. This recipe makes 4 pita pizzas, about enough for 3-4 people for a meal.
Margherita Pita Pizzas
*Taste of Home Italian Cookbook*
4 (6 inch) pita breads
2 teaspoon olive oil
2 garlic cloves, minced
2 cups shredded mozzarella cheese
3 plum tomatoes, thinly sliced
¼ teaspoon garlic powder
1 teaspoon Italian seasoning
fresh basil
1. Place pita breads on an ungreased baking skeet and brush wit oil. Top with garlic, 1 cup cheese, tomatoes, garlic powder and remaining cheese. Sprinkle top with Italian seasoning.
2. Bake at 425 degrees for 10-12 minutes or until cheese is melted and top with fresh basil.
