We had a family taco night and it was wonderful. We had the usual guacamole and salsa dips. My aunt also brought this amazingly addictive Mexi-Corn Dip. I am hooked!! I probably ate more dip than I did tacos.
For an extra zip, serve this dip with Hint of Lime or Hint of Jalapeno chips. I know these pictures aren’t really exciting. It is a white dip, but once your taste buds get ahold of this, you will never look at corn the same way.
Mexi-Corn Chip Dip
2 cans (8-10 oz each) Mexi-Corn, drained
1 can (4 oz) diced green chilies
1 can (4 oz) diced jalapenos
1 cup shredded cheddar cheese
1 cup sour cream
1 cup mayo
1. Mix all ingredients well and chill for 2-4 hours. Serve with chips
