Peppermint Snowball Cookies

Peppermint Snowball Cookies. Is there anything better than a sweet treat covered in powdered sugar? I just don't think there is. These are melt-in-your mouth good, with the sweetest hint of mint and white chocolate. Oh wow!
Are you in a sugar coma yet from all these wonderful cookies? My big decision will be choosing JUST ONE to make for my annual Christmas cookie exchange party. I may get wild and have to take 2 (or more) recipes.
I found these Ghirardelli Peppermint Chunks and I just knew I had to make a cookie with them. I am SO glad I did! Be sure to buy a few bags to keep on hand since these are just out for the season.
Peppermint Snowball Cookies
Peppermint Snowball Cookies. Is there anything better than a sweet treat covered in powdered sugar? I just don't think there is. These are melt-in-your mouth good, with the sweetest hint of mint and white chocolate. Oh wow!
Ingredients
1 cup salted butter, soft at room temperature
⅔ cup powdered sugar
2 ¼ cup flour
½ tsp salt
1 tsp peppermint extract
red food coloring
¾ cup Ghirardelli peppermint chunks, chopped
2 cups additional powdered sugar for coating
Instructions
In a large mixing bowl, cream together butter and ⅔ cup powdered sugar. Mix until light and fluffy.
Add in flour, salt, and peppermint and mix until combined.
Add in red food coloring 2 drops at a time until you reach your desired color. My cookies were more of a pink.
Stir in chopped peppermint chunks. Cover bowl and refrigerate dough for 1 hour.
Preheat oven to 375 degrees and line a baking sheet with parchment paper.
Scoop out 1-1 ½ tablespoon of dough and roll in to a ball. Place on cookie sheet. I bake 12 per sheet.
Bake cookies for 7-8 minutes. You don't want your cookies to get more that just a touch of very light brown on the bottom. Let your cookies cool completely and then toss them in powdered sugar. I give my cookies two rounds in the powdered sugar because I love it. 🙂
