Twice Baked Potatoes
8 baking potatoes, baked
2 Tbsp butter, softened
3/4 cup milk
1 egg, beaten
1 cup shredded cheese of your choice
4 bacon slices, cooked and crumbled
salt and pepper to taste
*Cut baked potatoes in half lengthwise and scoop out center of each potato. Put potato middles in a large bowl. Mash with butter, milk and egg and beat with electric mixer until smooth. Add cheese, salt and pepper, and bacon bits. Stir well. Heap back into potato skins.
Place filled potatoes on a cookie sheet and flash freeze by allowing them to freeze for 30 minutes. Put in individual sandwich bags inside a large freezer bag.
*To Serve: Thaw completely and bake for 25 minutes at 350 degrees
