Honey Lime Chicken
On my way to 100 recipes in 100 days.. Here is recipe 42: Honey Lime Chicken!
My Grammy gave my mom this recipe A LONG time ago. I ate it several times growing up and then my mom included it in the cookbook she gave me when I got married. This is originally a Weight Watchers recipe. I don’t know any of the points or health stats on it, but I do know that it is really really yummy.
I used lean chicken tenders and they were so yummy. The sauce was delicious and we even put it on our rice. I like the flavors of the lime, Dijon mustard, and honey. This meal comes together very quickly.
Honey Lime Chicken
1 ½ lb chicken, skinned
dash of salt
dash of garlic powder
4 tablespoon lime juice
4 teaspoon Dijon mustard
4 teaspoon honey
1. In a small nonstick baking pan, arrange chicken and sprinkle with salt and garlic powder. Bake at 350 degrees until chicken easily pierces with a fork. About 30 minutes.
2. In a small sauce pan, combine the lime juice, mustard, and honey. Heat until all combined and smooth.
3. Spread mixture over chicken and bake 10-15 minutes more, until golden brown.
Serve with rice and veggies.
