Lasagna Soup {Slow Cooker}

All the rich comfort flavors of lasagna, the cheesy, gooey goodness in one simple soup. Simmer in the slow cooker and serve without any messy layer assembly. This Lasagna Soup will warm you from the inside out.


  • 1 lb ground beef
  • 1 yellow onion, chopped
  • 2 tsp minced garlic
  • 2 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes
  • 6oz can tomato paste
  • 28 oz diced tomatoes
  • 15oz can tomato sauce
  • 6 cups chicken stock
  • 2 Tbsp dried basil leaves
  • 8oz mini fusilli pasta, cooked al dente
  • 1 cup cottage cheese
  • 1/2 cup sour cream
  • 2/3 cup grated parmesan cheese
  • 1 1/2 tsp ground black pepper
  • 1/4 tsp salt
  • 2 cups shredded mozzarella cheese


  1. Mix the cottage cheese, sour cream, parmesan cheese, salt and pepper in a medium bowl and put in the fridge until ready to serve.
  2. Brown the ground beef and onion and add to crock pot. Add in remaining ingredients except pasta and mozzarella.
  3. Cook on low 6-8 hours or on high for 3-4 hours.
  4. Cook noodles according to package and add to the soup just before serving.
  5. When ready to serve, add a large scoop of cottage cheese mixture to bowl, spoon soup over top and sprinkle soup with shredded mozzarella cheese.
