One Skillet Creamy Chicken Pasta {Easy Recipe}

This creamy one skillet chicken pasta is comforting and delicious.  It is hearty and contains everything necessary for a full meal.  Protein, check.  Veggie, check.  Pasta, check. Tender fettuccine, (linguine and spaghetti work in a pinch) with sweet carrots and savory chicken all simmered together in a cheesy, dreamy,  creamy sauce.

This recipe is a staple for us on busy nights.  And the leftovers are wonderful reheated the next day.

Do your kids have a favorite meal that you could make over and over for them?  This One Skillet Creamy Chicken Pasta is "that" dinner in our house.

One-pot meals (AKA One-Skillet Meals) feel like a gift with purchase in the dinner world. "Oh, you are making pasta? Great! Let's make it easier and cook it WITH the meat and veggies all in the sauce." These recipes have perfected the liquid-to-starch-to-mix-in ratios.

See all this beauty?!  This is another one of my favorite One Skillet Meals. It's chicken and pasta.....you really can't go wrong with chicken pasta.  I love that it is all cooked in one pan and comes together in 30 minutes.   

Ingredients

  • boneless skinless chicken thighs
  • carrots, onion, celery, garlic
  • salt and pepper
  • cream of chicken soup
  • milk
  • chicken broth
  • dried parsley and thyme
  • uncooked fettuccine pasta
  • Colby Jack cheese

Top tip for any One-Pot Pasta

Make sure you are stirring often so that the pasta doesn't stick to the bottom of the pan.

Use a large skillet or dutch oven for all one pot dinners.  Eveything needs room to develop the layers of flavored.

Think chicken noodle casserole without the peas and doesn't need to be in the oven for 45 minutes.  My girls devoured this and my son was telling me "yum yum" with each cheesy noodle bite.

I loved the abundance of carrots in this dish.  You can even substitute the veggies or add more.   1-2 cups frozen peas or a can of drained corn is yummy.

Instructions

Easy one-pot meals are the best recipes. They're delicious dinners and easy to clean up! I love these seven recipes when I need something quick, filling, and on the table with minimal mess.

  1. Heat olive oil in a large, deep-sided pot or very large skillet over medium heat.
  2. Add chopped carrots, celery, onion, and minced garlic. Saute over medium-high heat for 5-7 minutes.
  3. Add raw chicken, salt, and pepper and cook for 5 minutes, stirring occasionally (chicken will still be a bit pink in the middle; it will finish cooking next)
  4. Add soup, milk, broth, parsley, thyme and dry pasta. Stir well and bring to a boil.
  5. Reduce heat to low and simmer uncovered for 25 minutes until pasta is tender.  Stir every 2-3 minutes to prevent pasta from sticking to the bottom.  Low heat is important. If you notice it needs more liquid to get the pasta past the al dentate stage, add a bit of water or more chicken broth. 
  6. Remove from heat, stir in 1 cup cheese, and let set for 5 minutes.
  7. Top with remaining ½ cup cheese and serve.
  8. Enjoy!

My specialty is One-Skillet meals, where the pasta cooks
 right in the sauce.

Storage

Store any leftovers in an airtight container for up to 4 days. As more liquid if needed when you reheat it.

  1. It was delicious, but next time I will cut the thyme to 1/4 of a teaspoon. Overpowering. I added cayenne and chicken powder.
